Fast forward to today and my travelling lifestyle means I dine at hotel restaurants regularly. And you'd think that by now every hotel restaurant should have moved on and become more adventurous with their vegetarian fare. But have they?
The vegetarian dish of the moment is Mushroom Risotto and while this in itself should be fine, it is always the option. And I have never yet found this dish created in the same way at two establishments.
It can be incredibly wet with a very liquid rice and small chopped mushroom pieces mixed throughout. Or it could be quite dry with separated rice grains and a variety of exotic whole mushrooms placed artfully on top. It might be bright yellow or near white, or any shade between. Then it might be served on a wide over-sized plate or in a soup bowl or any other crockery option.
But why has this dish been chosen? That, I have no idea. But I do know seeing 'Wild Mushroom Risotto' on the menu doesn't fill me with joy any more as you can have too much of a good thing.
